- Smoked Mackerel, mild sweaty cigar, Veal Demi-Glace, honey roast ham. h
- Body
- Dusty and powdery with strong full burnt and wettened wood
- Palate
- Plenty of maritime here, with burnt cocoa, small amounts of Licourice, Aniseed and fermenting Prunes poking through, evokes the best Perigord confiserie'.
- Finish
- Short and medium term finish is primarily fruit driven but the long finish turns quite carbonic with areas of sump oil and tapenade.
A tremendous achievement, very complex indeed.
