Bushmills Malt 21 Year Old is an extremely rare single malt Irish whiskey. Only a very limited number of bottles are available each year. It is matured for a minimum of 21 years in three different types of casks. The whiskey is first aged in American bourbon barrels and Spanish Oloroso sherry casks for 21 years and upwards. The malt whiskey is then vatted and married for months in Madeira drums. The end result of this very special maturing process is a rich and smooth old malt whiskey with a wonderful combination of aromatic malt, gentle wood and rich spiciness - a wonderful and intriguing complexity on the palate, and perhaps the finest expression to date of malt distilling that is Bushmills.

- Caramel and cream. Barely-there traces of smoke and grain.

- Creamier, maltier than its younger siblings- hints of fruit. Buttery smooth without being oily.
- Palate
- Sweet toffee with a hint of honeyed orange. (Whatever smoke the nose promised seems to have vanished- yet it's hardly missed.)
- Finish
- A satisfying finish, nutty and smooth.
A sweet, jubilant introduction to Irish Whisky. Perhaps the "friendliest" whisky I've ever tasted- though by no means does it lack in character or complexity.

- Not exceptionally viscous but not thin either. It had legs, but nothing to brag about

- Mild fruitiness, smoke and sherry nuances balanced well so as to be a little mysterious

- Medium finish with a pleasant burn, a hint of pepper
I had a glass of this with Sweet Megan and the delightful Vicki at McGuire's Irish Pub in Pensacola, Fl. This is an easy drinking dram that is rich with flavor and depth of character. It is by far the best Irish whisky I have had. It compares nicely with an aged Macallan. There was something of a Sherry profile, but it wasn't dominant. Slightly smokey, and yet lightand drinkable. If you can find it and have the funds, you wont regret buying a bottle
